Luigi Baudana is one of the last garagiste estates in Langhe. With just 4 quality hectares, they are located in some of the most prestigious Barolo crus in Serralunga d'Alba. The wines of the Luigi Baudana collection are an expression of powerful, genuine and true-to-terroir wines, expressing the best of the Nebbiolo grape. Baudana, the family name, the historical cru and the hamlet, is a sign of just how deep the family's roots are tied to this land.
For over thirty years, Luigi Baudana and his wife Fiorina carried on the long family tradition of wine making in Serralunga d'Alba. Their love for their vineyards is like the love they have for each other. With a humble production of just about 800 cases of Barolo, they remain one of the best kept secrets in Langhe.
In 2009 Luigi Baudana entrusted the Vaira family with his historical vines in Serralunga d’Alba. This was proof that dreams do come true! Aldo had always loved Barolo from the Helvation soils of the area, and felt honored to have the chance to better understand and work this land. With a love for challenges, the Vaira family was enthusiastic to start a new adventure within such an authentic reality. Most of all, Giuseppe the oldest son, was overjoyed when he recognized some of the best ever seen fruit in these vineyards of Cerretta and Baudana. He looked forward to starting a new chapter in the family’s winemaking production.
Fruit is usually picked in mid-October, with a delicate fermentation in open-top tini that runs approximately 20-30 days followed by cappello sommerso. Cerretta is notorious for its extremely slow fermentation kinetic.
Punch-downs and gentle pump-overs are the only operations over the time of maceration. Malolactic fermentation is spontaneous and usually happens in the following spring.
Cerretta is a dive into pure Formazione di Lequio. It is austere and representative, with red fruits and balsamic tones of mint that are so typical of the village and of this cru. Fruit sorted three times, fermented in a vertical oak tino for approx. 55 days of skin contact, followed by 31 months of aging in large Slavonian casks.
Deep ruby color, Cerretta is a high structure and powerful Barolo, rich in red fruits that integrate perfectly with the powerful but never hefty tannins. The bouquet opens to red and dark fruit, balsamic notes and mineral nuances of iron. Chalky texture, iodine, Darjeeling black tea and baking spice will embrace your palate, with a lengthy fresh finish of mint and rosemary.

Similar to the celebrity chef phenomenon and due in-part to the documentary film series SOMM (available on Netflix), wine professionals are seeing their own emergence and nod on the global stage. We’re proud to introduce our own resident Somm and Managing Partner, Jake Assaf. Jake’s been a humble servant of the grape for more than 14 years and eagerly boasts ‘someone has got to taste wine and cheese for the rest of us.’ Jake is excellent at just that and is also a jedi master at pairing wines to perfectly suit your tastes and preferences. He personally selects the wines on our tap system (8 wines available on draft) and reserve bottle list. Our wines rotate frequently and aim to introduce you to wines you’ve never tried from producers you’ve likely not heard of. Not sure what you like?
